A new setting
For more than 15 years, Anne-Sophie Pic’s cuisine has shone at the heart of the Beau-Rivage Palace. The new restaurant Pic au Beau-Rivage Palace, designed and crafted by architect Tristan Auer, reflects through its spaces the inventiveness and harmony of the Chef’s cuisine. Constantly pursuing excellence and emotion, Anne-Sophie Pic offers a new way to present her cuisine: she invites her guests to an unprecedented tasting journey through the various areas of the restaurant, revealing the creation of her inventive beverages. The restaurant opens up to the light and the sublime view of the Beau-Rivage Palace. Its different spaces—dining room, bar, lounge, veranda, terrace, and garden—combine to create a living space, adapting to our desires and wishes.
A gastronomy in motion
“It was while exploring this Swiss path that the culinary signature of my Lausanne restaurant was born. A sensitive and floral cuisine that celebrates the lake and the scents of the plain to the alpine peaks,” Anne-Sophie Pic tells us in collaboration with Jordan Theurillat, Chef at Pic au Beau-Rivage Palace. It is indeed to him that the Chef has entrusted, with full confidence, the keys to her Lausanne home. Having evolved for over 10 years within Maison Pic, Jordan Theurillat immerses himself daily in the Chef’s culinary universe, driven by a shared passion for nature, terroir, and encounters. By his side, he can count on a passionate brigade and a virtuoso pastry chef, Baptiste Tisserand.
Anne-Sophie Pic’s cuisine results from a perpetual quest for balance of complex flavors, textures, and aromas—bold yet sensitive to every detail. Her culinary signature cannot be reduced to a single dish but rather resembles a philosophy: Impregnation. This concept encompasses several techniques and preparations, all rooted in aromatic structure. Anne-Sophie Pic and her chefs employ all their skills to reveal new flavors: marinating, infusing, macerating, or smoking, through which aromas intertwine and combine in subtle balance, creating unprecedented tastes. Following this creative philosophy as a guiding thread has given birth to emblematic dishes such as the Berlingots ASP ©, the Millefeuille blanc, or the “Homard bleu légèrement fumé et tourteau de casier, voile d’amandes fraîches saké et melon menthe coq,” a dish served to King Charles III in September 2023.
A plural sommelier experience
But the spectrum of Impregnation does not stop there. To accompany her creations, Anne-Sophie Pic has imagined, in collaboration with Paz Levinson, Group Pic’s Head Sommelier, pairings with and without alcohol, promising unprecedented aromatic dialogues. Dominique Peretti, Head Sommelier at Pic au Beau-Rivage Palace, supported by the talented mixologist Alexandre Besnault, offers and composes a wine selection highlighting exceptional bottles and innovative creative drinks that perfect the experience.

The new setting of Anne-Sophie Pic in Lausanne, entirely redesigned by Tristan Auer, now features a garden just below its terrace. Our Chef Jordan Theurillat has even planted a few aromatic herbs there!
